Chicken Pot Pie

Anyone else obsessed with comfort food around this time of the year?! I love me some comfort food! Soups, Stews, and loaded macaroni and cheese havs been my go-to dinner recipes this week.

Now I was so shocked when my Fiancé told me he has never had Chicken Pot Pie. Not at a restauraunt, homemade, or even the frozen kind from the gracoery store. Immediately after hearing this I went to the store and grabbed the ingredients!


Lets Get To Cooking!

1 lb Boneless Skinless Chicken (cubed)
1 c – Carrots sliced
1 c – Frozen green peas
3/4 c – Celery sliced
1/3 c – Butter
1/2 c – Chopped onion
1/3 c – Flour
Salt and pepper
3/4 c – Milk
2 – 9 in pie crust (unbaked)

Preheat oven to 425
Put chicken, carrots, peas, and celery in pot, add water to cover and boil 15 minutes. Drain water into a container. Use 1.5 cups of this broth in the onion mixture later, and save the rest for soup another day.
In separate pan, cook onion in butter, on low heat, until its see-through (about 10 minutes). Stir in flour, salt, and pep. Slowly stir in chicken broth and milk. Simmer until thick.
Put chicken & veggies in bottom pie crust. Pour hot liquid over it. Cover with top crust. Seal and cut edges. Add some slits in the top and bake for 30 to 35 min. Cool 5 min before serving.

Notes: Cut fat off chicken before cooking. Cube them into bite size pieces (like 1/2 inch). Feel free to add more spices to your liking, like garlic or garlic powder, onion powder, celery salt, and more!

After the first bite, he was hooked! We made this two nights in a row. hahaha I hope you all give this recipe a try and enjoy it as much as we did. Feel free to add different veggies in there too.
